It is used to separate groups of words when, as the writer, you want to emphasize a statement...or use them in place of a colon...or to replace parentheses or a commma.
Parentheses are round, almost like the letter " O" but only half of it, and you put the first half before the sentence and the last half at the end of the sentence or phrase.
